1 cooked portabella mushroom
1 small piece of cooked steak (mine was about 3" by 3" by 1")
1/4 fresh avocado
pickled pearl onions
1 tbsp goat cheese
1 piece of naan or pita
honey mustard sauce or dressing
Chop all but the wrap and combine. Dress greens separately, then add to mixture in a proportion that makes sense to you. Heat wrap for best results (this keeps it from tearing) in a microwave or toaster. Put filling in wrap and stick a toothpick in. Serve with a dill pickle and potato chips, if available.
If you wanted to make this GFCF, you would substitute black beans for the goat cheese and use a corn tortilla. And once you've gone that far, why not try lime dressing instead of honey mustard, and maybe a little salsa? Mmm, tasty!
For a vegetarian version, I'd suggest using soy bacon in lieu of steak. Or, you could go in more of a garden style direction with sprouts. Crunchy and nutritious!
